JW Marriott Surabaya Presents “Taste of Istanbul: Sultan’s Feast” for Ramadan 2025

JW Marriott Surabaya is inviting guests on a remarkable culinary journey this Ramadan with Taste of Istanbul: Sultan’s Feast, an exquisite iftar experience inspired by the hotel’s dedication to authenticity and cultural storytelling. Behind this grand feast lies the journey of Executive Chef Rio Abednego, who traveled through the bustling markets and coastal kitchens of Marmara in Istanbul to master the rich flavors of Turkish cuisine. Now, he brings this culinary mastery back to Surabaya, blending it with his signature touch.

To create an iftar experience reminiscent of an Ottoman royal banquet, Chef Rio embarked on an immersive culinary expedition to Turkey. He trained under Istanbul’s renowned culinary masters, learning the art of balancing bold spices, slow-roasting meats, and crafting intricate pastries. From the fragrant alleys of the Grand Bazaar to the seafront grills along the Marmara coast, Chef Rio mastered ancient Turkish techniques. He perfected the use of Urfa biber, a smoky, mildly spicy pepper, and pul biber, a floral chili, in kebabs. He also uncovered the delicate secrets of Karaköy Güllüoğlu’s legendary 200 year old baklava and the slow-cooked magic of Testi Kebab, a Cappadocian specialty prepared in a clay pot.

“This is not just about replicating recipes; it’s about bringing the essence of Turkish hospitality to Surabaya,” said Executive Chef Rio Abednego. “In Istanbul, every meal is a ritual of sharing, and that is the spirit we are bringing to Pavilion Restaurant this Ramadan.”

Guests at Pavilion Restaurant will indulge in a lavish iftar spread featuring the best of Ottoman cuisine. The experience begins with a variety of Ottoman Mezze, including haydari (a creamy yogurt dip) and İnegöl Köfte (grilled meatballs). The Mangal Live Station offers freshly grilled specialties such as İskender Kebap, succulent doner kebab served with tomato sauce and yogurt, and Ekşili Palamut, a delicate steamed mackerel infused with lemon and thyme. The Dessert Caravan promises a sweet ending with Künefe (a crispy cheese-filled pastry soaked in orange syrup), Mahalabia (a fragrant milk pudding), and, of course, authentic Baklava layered with pistachios and honey.
