The Pasta Heist: Chef Diego Martinelli Takes Over Uma Cucina

Uma Cucina at COMO Uma Ubud is set to host an extraordinary culinary takeover as Chef Diego Martinelli, founder of CIBO! Pasta Lab, brings his signature Italian craftsmanship to the restaurant from April 7th to 9th 2025. Titled The Pasta Heist, this exclusive three-night event will feature a specially curated menu, available as a four-course set or à la carte, complemented by expertly selected Italian wine pairings.

A native of Bologna, Italy, Chef Diego Martinelli has honed his craft across Europe, the Middle East, and Asia, working in luxury hotels, Michelin-recognised kitchens, and even Ferrari Racing’s Il Cavallino restaurant. Now, he brings his mastery of handmade pasta and bold Italian flavours to COMO Uma Ubud, delivering an immersive dining experience inspired by his passion for authentic, artisanal cuisine.

 

 

"Italian cooking is about simplicity, soul, and technique—letting the best ingredients shine," says Chef Diego Martinelli. "With The Pasta Heist, I want to bring a playful yet refined take on classic dishes, blending tradition with creativity in every bite."

The menu showcases handcrafted pasta and seasonally driven Italian dishes, including bucatini carbonara with candied guanciale, beef cheek ravioli with pickled grapes, and tortellini al ragù inspired by chef diego’s hometown of Bologna. Guests can also indulge in dishes such as yellowfin tuna crudo with stracciatella, Crispy pork belly with pumpkin purée, and Eggplant Parmigiana with light garlic cream. Italian wine pairings are available to enhance the experience.
